Ingredients needed to make a Guacamole Grinch Food Dip:
4 avocados
15-20 cherry tomatoes diced (depending on size)
3 tablespoons of guacamole spice mix (we used Epicure Guacamole Dip Mix)
2 green stuffed olives
2 black kalamata olives
Juice of half a lemon

How to Make this Grinch Guacamole Dip
Start by cutting all avocados in half and remove pits. Then take a spoon and slide it gently between the skin of the avocado to separate it from the flesh.

Once all avocado pieces have been properly skinned, mash them with a fork or blend in a food processor.

Add the juice of half a lemon to your avocado mash and combine well. This is a very important step because the lemon juice will prevent the avocado from turning brown.

Next, add the Guacamole Spice pack. NOTE: It’s important to use a guacamole spice as to not change the color of the guacamole mix. If you add tomatoes and onions to your guac mix or even salsa as I’ve seen in some recipes, your Grinch will change colors.

If you can’t find a package of guacamole spice mix, try making your own with a mix of sea salt, ground pepper, garlic powder, dried red bell pepper, chilli flakes, onion powder, ground cumin and paprika.

Chop the tomatoes into small pieces.

Cut Kalamata olives in thin strips lengthwise. You will be adding these slices to form the grinch’s mouth.

Place your guacamole mixture in the centre of your plate and shape into a grinch face.

Add the Kalamata olives in thin strips to form the Grinches mouths shown below.

Add two green olives for eyes making sure the red peppers are visible.
Complete the Grinch’s facial features by adding two slices of the black olives for eyebrows and a triangle diced tomato for his nose.

Place a pile of round tortilla chips at the top of Grinch’s head followed by your diced cherry tomatoes in the shape of Santa’s hat.

Don’t forget to put one chip to mimic a pompom at the end of the hat.

What to dip with Guacamole?
Serve your guacamole dip with chips or crackers. You can also add carrots, cucumbers, tomatoes, or any veggies you would like. This recipe make the perfect grinch food – Guacamole dip!
