Ingredients to make this Watermelon Pizza Dessert:

2 thick slices of seedless watermelon
1 (8 ounces) cream cheese, room temperature
1 cup powdered sugar
1 teaspoon vanilla
1 cup milk chocolate chips
1 teaspoon coconut oil or vegetable shortening
Fruit for decorating: kiwi, strawberries, blueberries

This recipe is healthier and lighter using the watermelon instead of cookie dough crust. In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla. Mix until smooth.

Pat the watermelon slices with a paper towel to help the cream cheese mixture stick.

How do you soften cream cheese? The easiest way to soften cream cheese is to set it out at room temperature for a few hours but that requires preparation, which sometimes can be hard. You can also soften cream cheese in the microwave at 15-second intervals until softened.
