Green Marshmallow Fluff Cupcakes Recipe

Equipment Needed:

  • Cupcake Pan
  • Microwave-Safe Bowl
  • Electric or Stand Mixer

Ingredients:

  • Boxed Cake Mix
  • Oil, Water, and Eggs (as directed on the cake mix box)
  • Lucky Charms cereal
  • Butter
  • Powdered Sugar
  • Vanilla Extract
  • Marshmallow Fluff
  • Heavy Cream
  • Green Food Gel Color

Instructions:

1. Preheat the oven to 350 degrees.

2. Place the cake mix in a mixing bowl and set aside.

3. Crush three tablespoons of Lucky Charms cereal (excluding marshmallows if preferred) using a grinder or a ziplock bag with a rolling pin.

4. Remove three tablespoons of cake mix from the bowl and replace with the crushed Lucky Charms.

5. Add eggs, oil, and water according to box instructions.

7. Place cupcake liners in a cupcake pan. Fill each liner halfway with the cake batter using a spoon or ice cream scoop.

9. Remove cupcakes from the oven and set aside to cool.

Making the Buttercream

In a clean mixing bowl, combine butter and marshmallow fluff. Mix until fluffy and well combined (about 3 minutes).

Dip a toothpick into the green food gel color and carefully wipe the inside of the piping bag to create green streaks (avoid poking holes in the bag).

Green Marshmallow Fluff Cupcake Recipe

Green cupcakes make the perfect treat. Add lucky charms to the top and have the ideal St. Patrick's Day treat.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Put the box cake mix in a mixing bowl and set aside for later.
  3. Take three tablespoons of the Lucky Charms cereal and crush it using a grinder, or put it in a ziplock and crush it using a rolling pin. (I did not crush any of the marshmallows because I didn’t want the cupcakes to be too sweet, but feel free to crush them if you like.)
  4. Remove three tablespoons of cake mix from the bowl and replace it with the crushed Lucky Charms. Now, add the eggs, oil, and water to the cake mix according to the instructions on the box. 
  5. Add 3-4 drops of green food gel color to the mixing bowl and mix all the ingredients until combined. 
  6. Put cupcake liners in a cupcake pan, and then use a spoon or ice cream scooper to fill the cupcake liners with cake mix a little over halfway. 
  7. Bake the cupcakes according to the directions on the box. 
  8. Take the cupcakes out and place them to the side to cool. 

Making the Buttercream

  1. Put the butter and marshmallow fluff in a clean mixing bowl and mix until fluffy and combined, about 3 minutes.
  2. Next, add the vanilla extract and mix for about 1 minute.
  3. Now, add the powdered sugar and mix the ingredients low. While mixing, pour your heavy cream into the mixture and then turn the speed up to medium. Mix until the buttercream is smooth, about 1 minute. 

Assembling the Cupcakes 

  1. Dip a toothpick in the green food gel color and wipe the inside of the piping bag with it. Be careful not to poke holes in the piping bag, as this will give the buttercream green streaks. 
  2. Add the buttercream to the piping bag, secure the end, and cut a medium-sized hole in the tip of the bag.  
  3. Pipe swirls on top of the cupcakes. 
  4. Place the Luck Charms cereal and Marshmallows randomly around the buttercream.
  5. Serve and Enjoy! 

Notes

Store these cupcakes in an airtight container in the fridge for up to 3 days.

For this recipe, I used only half the batter to make a dozen cupcakes. You can freeze the leftover batter for up to a month by putting it in a freezer-safe ziplock bag or an airtight container.

If you use all of the cupcake batter, double the buttercream recipe.

If the buttercream is too soft, add more powdered sugar, about 1 tablespoon at a time.

Have fun with the addition of sprinkles. Add as many or as little as you like.
